ULIAN COFFEE
In 1980s, one type of coffee entered a small village named Ulian Village. This village is located in KIntamani hills slope, Kintamani, Bali, Indonesia. This coffee is named Ulian Coffee because it is originated from Ulian Village.

This coffee variety is Arabica that can grow rapidly in the height of +-1080 meters above the sea level and have a good quality. This coffee is planted between oranges in which there are orange trees as shelter for the coffee trees.

While the procedure of coffee cultivation is started from nursery, planting, breeding, harvesting and post-harvest processing so that it becomes green beans and we did it intensively so that we can produce high quality beans.

Nursery
This coffee is cultivated by selecting high quality spawn and has the minimum age of 10 years, by picking the ripe fruits and then peeled off to get the beans and washed thoroughly and put in a shaded place so that it becomes dry. After the beans are quite dry we sow them on a seedbed that have been prepared and given adequate shades. After it grows, the seedlings are moved into polybag plastics that have been filled with topsoil until the seedlings grow branch and ready to be planted in the farm.

Cultivation
the land that have been cleared from weeds are picked to create planting holes. But before filled with coffee seedlings, the hole is filled with organic fertilizer that have been premixed with soil, and then the hole is filled by seedling and planted. The purpose of filling the hole with organic fertilizer is so that the coffee tree development can be good. Coffee planting are done between orange plants.

Nurture
In nurture, there are several steps:
1.    The cleaning of weeds
2.    Fertilizing
3.    Spraying
4.    Cuttings
5.    Stem cuttings

In the harvest of coffee we sort them out ranging from handpicking of coffee cherries on the trees where we just choose the coffee cherries is completely ripe is characterized with red color. If you do not see the bright red cherries yet then we wait until the cherries are ripe and bright red.

After the coffee cherries handpicking, then the coffee cherries will be collected for further processing. Coffee cherries are collected and then peel them in attempt to separate between the seeds and the skin using a coffee pulp machine.

The next process, after the separation between the seeds and skins, then the coffee bean will be fermented by soaking water for 24 hours. For the coffee skin, they will be utilized as fertilizer for coffee crops and orange.

After they have been fermented for 24 hours, the coffee bean will be cleaned by using clean water only without additional materials until the coffee beans are clean. During the process of cleaning, we would sort them out by using water where we would separate the floating beans with those drowning in the water and we would only pick the beans, which are drowning only. The floating beans will be thrown away because floating beans are those not-too-good quality beans.

The coffee beans that have been washed using water will be dried under a direct sunray to dry.

Coffee beans, which are dried, will be then collected for the peeling process using huller machine. After the peeling process, they will become green coffee beans or green beans. Nevertheless, remember before the peeled beans that the dryness level must be good so that it would make a good quality green bean.

Green coffee peeling results will be then sorted out manually by hand. For this work, we usually use daily workers in our area. Coffee beans, which are defects of color, shape, and appearance, will be collected and separated then packed them separately with good coffee beans. Whilst, the good coffee beans will be packed separately with seeds that are not good.

Green coffee beans results then will be put in plastic sacks so that the quality of coffee beans remains intact. Coffee beans, which are packed then, will be put in warehouse storage of coffee and the product is ready for sale.
